Sourcing specialty ingredients in the mountains can be quite the adventure due to many challenges like high elevation, environment, & available land. Local markets offer some variation, but mostly ordinary cuts, which tend to lack the true essence of the southern Rockies.
That's why I'm excited to introduce a special menu featuring Colorado's own premium raised meats. I purchase all of the bison, elk, & wagyu beef from Terry Bison Ranch as well as Snake River Farms along the Colorado/Wyoming border. The Yak steaks come from Del Yaks in Montrose, Colorado.
